Sahara sets July 31 closing for Bazaar Meat, unveils plans for Maroon takeover

Sahara Las Vegas has officially announced that Bazaar Meat by José Andrés will close its doors on Thursday, July 31, at the resort’s original SLS location. The beloved steakhouse, known for its dramatic presentations and adventurous tasting menus, will relocate to The Palazzo at The Venetian Resort later this year. The move follows plans disclosed earlier that indicated a late summer reopening in the Palazzo tower.
A standout on the Strip
Since its debut in 2014, Bazaar Meat earned acclaim for both its immersive theatrical dining experience and innovative menu items—think cotton-candy foie gras, dry-aged Japanese A5 Wagyu, and flamboyant meat carousels. The restaurant garnered numerous awards, including recognition from Wine Spectator, Eater, the Las Vegas Review-Journal, Thrillist, and Business Insider, establishing itself as one of the city’s most iconic and daring dining destinations.
Maroon: a Caribbean steakhouse debuts
Taking over the space will be Maroon, the first West Coast outpost for James Beard Award–winning chef Kwame Onwuachi. Slated to open in late 2025, Maroon blends live-fire cooking and Caribbean culinary traditions with Las Vegas showmanship. Inspired by the Maroons of Jamaica, the menu emphasizes jerk-seasoned meats, dry-aged cuts, and West-African, Jamaican, and Creole flavors, featuring dishes like scotch-bonnet sauces and grilled seafood.Maroon marks a significant moment for the Sahara, bringing fresh diasporic cuisine and cultural storytelling to the Strip. Onwuachi, recognized by Time as one of 2025’s most influential figures and known for New York’s top-rated Tatiana and Dōgon in Washington, D.C., brings both pedigree and passion to the upcoming concept.
